Russian pancakes (Blini) are very popular dish, especially baked during 'Pancake Week' or Maslenitsa (Shrovetide), a celebration at the end of winter that heralds the start of Lent (Great Fast). The name of the holiday, Maslenitsa is derived from 'maslo', which means butter or oil in the Russian language. Traditionally, the pancakes are served with jam, sour cream, honey, caviar, salmon, mushrooms, cottage cheese and of course, lots of butter.
