The traditional Fortune Salmon Yee Sang (Yusheng) dish or Prosperity Toss, is a raw fish salad, masterfully prepared by chefs of Sakae Sushi, a chain of restaurants, based in Singapore, serving Japanese cuisine. 'Fortune Salmon' consists of thick slices fresh air-flown salmon, shredded vegetables and variety of authentic Japanese ingredients, such as seasoned jellyfish, mekabu seaweed, scallop, Japanese cucumber, radish, sesame, crunchy crackers and sweet dressing.
Yusheng is considered a symbol of abundance, prosperity and vigor and its consumption is associated with festivities of Chinese New Year in Malaysia, Indonesia and Singapore.
