Clitocybe nuda (Lepista nuda), Wood Blewit or Blue Stalk, are delicious edible mushrooms, which grow abundantly in coniferous and deciduous forests in the lowlands and the mountains, in the autumn (September-December). Their flesh are purple, hard, do not rot and do not suffer from frost. The mushrooms Wood Blewit are particularly suitable for soups, cream sauce or stewed in butter, can be preserved in olive oil or white vinegar after blanching. They have a strong flavour, so they combine well with leeks or onions. The Clitocybe nuda mushrooms must be well heat treated, otherwise they could cause indigestion and allergic reactions in sensitive individuals.
