Winter Mushrooms Description: 

These Velvet Shank (Flammulina velutipes) or enoki mushrooms growing in the snow, are known as 'winter mushrooms', because they thrive in freezing temperatures.
The waxy coating on their caps protects them against frost and water loss and their stems have a velvety texture, that helps insulate them from the cold.
They typically grow in clusters on dead or decaying hardwood trees and stumps, such as elm, ash, and oak.

These wild mushrooms are edible, though they require thorough cooking. The widely available, long white enoki mushrooms sold in stores are a cultivated form of this same species.
