Mushrooms Chicken of the Woods - Chicken of the Woods (Laetiporus sulphureus) are widely distributed mushrooms which grow on trees across Europe and North America. Laetiporus sulphureus grows on hardwoods such as oak, cherry and beech from August to October or later, and causes brown rot in the heartwood of trees on which it grows. Young specimens are edible, but should not be eaten raw. The mushroom tastes good sauteed in butter or in a cream sauce, served on toast or rice, a good substitute for chicken.
